Dry heat mobile Bain Marie with Hot Cupboard under. Suits 1/1GN, 1/2GN, 1/3GN pans up to 150 mm deep. The heat around the pans is controlled between 80 and 90 degrees C to maintain food temperatures without burning or drying. Fitted with very efficient fan-forced heating & recirculation system, providing energy efficiency, fast heating, quick heat recovery & even hot air distribution without hot spots.
